It's an oats obsession.

Overnight oats, yes I'm obsessed.  

Ever since my aunties & mom showed me this quick & easy recipe, it's been my go to breakfast ever since. I used to attempt oatmeal with fruit but found it a little odd with my cold fruit turning warm from my warm oatmeal. I'm also a big lover of fruit and yogurt parfaits but can only do so much yogurt day in and day out. So I said hello to the happy medium of overnight oats! This is a very eyeball kind of concoction, but here's the usual digs:

Quaker oats oatmeal

Chia seeds

Greek yogurt (a few spoonfuls to thicken the mix - I like the The Greek Gods Greek Yogurt Honey Vanilla for a little extra flavoring)

Silk almond milk vanilla  (just enough to soak the oatmeal, chia seeds, and yogurt mixed together so that it's slightly soupy, then let this sit in the refrigerator overnight)

In the morning, the mixture of oats, chia seeds, yogurt, and almond milk will look like gooey pudding. After scooping the amount I'd like to have, I add in chopped walnuts, roasted & unsalted sunflower seeds, and slivered unsalted dry toasted almonds (gotta love Costco and Trader Joes for these) along with blueberries and sliced strawberries. 

So yums, easy, and perfect for packing on the go (make a big batch and you're set for the week!). Enjoy and let me know of any versions you love trying!
